Yummy Dinner

Yummy Dinner! Turkey Burger Stackers!


Ingredients Needed:
Extra Lean Ground Turkey
Egg Plant
Onion
Basil
Marinara Sauce
Goat Cheese

Pre heat oven to 400, heat skillet to medium heat

Peel and slice Egg Plant and Onion, roast in oven till eggplant is soft.

While the veggies are cooking make EXTRA thin turkey burgers season with salt and pepper put in pan with little evoo. cook evenly on each side.


Assemble and Enjoy!

Breakfast to Dinner

Most people who know me, know that I LOVE L-O-V-E oatmeal for breakfast! But I have found a new love! Banana Smoothie! While doing P90X, I am trying to cut back on carbs and ramp up my protein (also Dr. orders) So I swapped out my morning oats for a protein packed breakfast! Its like having a banana shake! I even make it for a healthy dessert sometimes!

1/2 banana
1 cup almond Milk
1 cup ice
1/2 h2o
1 scoop Vanilla Protein Powder

Vitamix it! AKA Blend and Enjoy!... Look at the Protein in this baby... the best part besides how Yummy it is, It keeps me full!

Now onto dinner... Real Simple has an initiative to take back dinner! I agree... Dinner needs to be healthier and a true family affair! It is a time to reconnect and have great conversation as well as nourish our bodies!

Hubs and I eat dinner together 99 percent of the time and it is one of my favorite parts of my day whether we are eating in and cooking together or going out and deciding what looks best and what to share! It is pure joy!

If you are from Des Moines, you probably are aware that is week is Restaurant Week, 3 course meal for $25 at great local restaurants! Last night hubs and I went to Sbrocco. It was good, but I was underwhelmed. Thursday we are trying a new restaurant Zombie Burger it is a soft opening and we couldn't be more excited to try it... not healthy... but I am sure Yummy!

So take back dinner... what makes dinner special to you? To me its reconnecting and enjoying yummy food after a long day!
